Each region is distinguished by a specific oil production, all of which are excellently good and of high quality. <\/p>\n\n<p class=\"wp-block-paragraph\">We, however, will tell you about <strong>Campanian Extra Virgin olive oil,<\/strong> that of our native land.<\/p>\n\n<p class=\"wp-block-paragraph\">Campania, like all Italian regions, offers traditional gastronomic products that are unique and inimitable. These products have been made since ancient times, with production methods passed down from generation to generation through pages that smell of history and words steeped in passion and pride.  <\/p>\n\n<p class=\"wp-block-paragraph\">A pride that fills your heart and soul, because it is these traditional culinary excellences that have made Campania and Italy famous throughout the world.<\/p>\n\n<p class=\"wp-block-paragraph\">Among the countless recognized and certified products, <strong>Extra Virgin Olive Oil can be defined as one of the main symbols of Campanian gastronomic excellence.<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Discovering Campanian Oil<\/strong><\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Extra Virgin Olive Oil is produced throughout almost the entire Campanian territory.<\/p>\n\n<p class=\"wp-block-paragraph\">Campania is the fourth region in Italy for the quantity of oil produced annually and the sixth, considering the territories dedicated to olive cultivation.<\/p>\n\n<p class=\"wp-block-paragraph\">The native varieties are numerous (about 60), as are the cultivation techniques that vary based on different geographical and pedoclimatic characteristics. The biodiversity of the territory, characterized by the coexistence of coastal and hilly areas, has given life to oils of excellent quality and certification. In fact, <strong>among its numerous local oils, Campania also features five with PDO certification recognized by the European Community.<\/strong>  <\/p>\n\n<p class=\"wp-block-paragraph\">Before moving on to describe these five oils, let us briefly explain what PDO means.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>PDO<\/strong> is an acronym that stands for <strong>Protected Designation of Origin.<\/strong> It is a collective trademark certifying that all stages of harvesting, production, processing, and packaging take place in a specific geographical area.<\/p>\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/contedoro.com\/wp-content\/uploads\/2020\/10\/dop.png\" alt=\"\" class=\"wp-image-1745\"\/><figcaption class=\"wp-element-caption\">PDO logo image<\/figcaption><\/figure>\n\n<p class=\"wp-block-paragraph\">Having clarified this, let us return to the five certified Campanian oils:<\/p>\n\n<ol style=\"list-style-type:1\" class=\"wp-block-list\">\n<li><strong>Cilento PDO oil:<\/strong> the production and processing area includes 62 towns within the Cilento and Vallo di Diano National Park. It is obtained from the pressing of Pisciottana, Rotondella, Ogliarola, Frantoio, Salella, and Leccino olive varieties for at least 85%, plus other local varieties. <\/li>\n\n\n\n<li><strong>Colline Salernitane PDO:<\/strong> the production and processing area includes 86 municipalities in the province of Salerno. It is obtained from the pressing of Rotondella, Frantoio, Carpellese, or Nostrale olive varieties for at least 65%; Ogliarola and Leccino in a measure not exceeding 35%, plus other local varieties. <\/li>\n\n\n\n<li><strong>Penisola Sorrentina PDO:<\/strong> the production and processing area includes <strong>13 municipalities<\/strong> of the Sorrento Peninsula, the Lattari Mountains, and the island of Capri. It is obtained from the pressing of Ogliarola or Minucciola olives for no less than 65%; Rotondella, Frantoio, or Leccino in a measure not exceeding 35%, plus other local varieties. <strong><\/strong><\/li>\n\n\n\n<li><strong>Colline dell\u2019Ufita PDO:<\/strong> the production and processing area includes 38 municipalities of the Ufita and the Middle Calore Valley, in the province of Avellino. It is obtained from the pressing of no less than 60% of the Ravece variety, plus other local varieties. <\/li>\n\n\n\n<li><strong>Terre Aurunche PDO:<\/strong> the production and processing area includes 18 municipalities in the Caserta area. It is obtained from the pressing of at least 70% of the Sessana cultivar, plus other local varieties. <\/li>\n<\/ol>\n\n<p class=\"wp-block-paragraph\">Each of these oils follows a very precise production specification. They present aromas and flavors that make them unique and different from one another. It should be added that <strong>the flavor and aroma of each of them is strongly linked to their production areas, as are their chemical-physical characteristics<\/strong>. By closing your eyes and tasting them, you can perceive the sea breeze, the warm sun of the coasts, or the fresh air of the hills.    <strong>Mild or more persistent aromatic intensities that blend harmoniously with meat, fish, legume, and vegetable dishes.<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">It is not only the biodiversity of the territory that makes Campanian EVO oil famous. Also giving it importance are the stories linked to the production sites, where the olive plant has had a role of primary importance for family sustenance since ancient times; therefore, it has always been perceived as something sacred, to be cared for over time with patience and dedication. This is why a large part of the Campanian olive groves consist of majestic centuries-old trees.  <\/p>\n\n<p class=\"wp-block-paragraph\">It should also be remembered that extra virgin olive oil is the symbol of the Mediterranean diet, which was discovered precisely in Campania, specifically in Cilento, by two American scholars.
