Extra virgin oil, a valuable asset to be promoted and enhanced

The Ministry of Agricultural Food Policies made a stop in Irpinia to promote and enhance a precious commodity such as Ravece.

His Wealth. Our Fortune” that began a year ago at the Sol&Agrifood show within Vinitaly 2017.
A long journey from North to South, passing through Irpinia, to meet producers and restaurateurs with the intention of raising consumer awareness of label reading, to learn about the nutritional characteristics, variety, origin and traceability of an Italian product of excellence. A key role in this fantastic tour that ideally united the regions of the Bel Paese was played by the DOP Consortia that protect and promote the product and the Oil Road.
A packed calendar of meetings that stopped in Venticano yesterday afternoon at the Fam oil mill, a company that has won many awards for its extra virgin olive oil. Doing the honors was the President of the Cosorzio Dop Irpinia Colline dell’Ufita, Michele Masucci, who lined up the best declinations of Ravece in the land of Irpinia. Present were producers Fontana Madonna, Contedoro – Olio Lo Conte, Azienda Agricola Serluca Antonietta, Feudo Apiano – Angelo Silano, Barbieri Angelo Sas, Coprovol, Montuori, Oleificio Fam and A.I.P.O – Primoro.
Masucci explained the characteristics of the area and local production, which is distinguished from the rest of Italy by this strongly identifiable olive considered precious and unique for the peculiar organoleptic qualities and aromas it is capable of releasing. “We are a small PDO,” said the president, “but its characteristics are glaring. So good then are initiatives like these that allow us to go outside our borders and spread the culture of Ravece to the rest of Italy.”
Enriching the event was Nello Di Marcantonio, who introduced the mission being set by the Ministry of Agricultural Food Policy: “We must raise consumer awareness by trying to carry out the same work that was done with wine. Extra virgin olive oil, like wine tells about a territory with its history and culture. Irpinia has nothing to envy the rest of Italy, indeed it can count on the cultivation of Ravece, an ancient olive cultivar that adds depth to any dish.”
Also starring was Professor Maria Luisa Ambrosini, an expert in the field who spoke about food pairings, organoleptic properties and the use of extra-virgin: “Ravece evokes sensations of freshness, giving off intense scents that reflect the land it belongs to. The Colline dell’Ufita PDO is based on this variety for which the characteristics on consumption are very detailed unlike most PDOs. There is a very precise degree of definition of the product, bitter on the tongue and spicy on the lips. The triumph of scents is evident, within it are what I call magic molecules. Its aroma can be frightening to taste, but in reality we are dealing with one of the most precious oils we have in Italy, perfect for refined and classy culinary pairings.”
Finally lending their contibute for the culinary parenthesis were the chefs: Rosario Morra – Ristorante Taverna Colauri (Naples); Salvatore Avallone, Ristorante Cetaria (Baronissi); Giovanni Mariconda, Ristorante Degusta (Avellino); and Pellegrino Tolino, Ristorante La Vecchia Casa (Forino). The chefs presented a special oil-food tasting. 4 recipes inspired by the gastronomic tradition of Campania to enhance in a weave of aromas, scents and flavors, the memorable textures of typical ingredients enriched by the Fam company’s extra virgin, an oil of the highest quality that brings to each dish that extra touch of personality capable of making a difference on the emotional level of those who taste it.
