Olio Evo, When can Oil be Said to be Extra Virgin?
EVO oil is obtained by pressing olives that have reached the right level of ripeness to ensure the maximum beneficial properties of this pivotal ingredient in Mediterranean cuisine. As stated within the November 14, 2003 Decree in the Official Gazette and the EC Reg. of June 13, 2002 , Extra Virgin Olive Oil must be obtained exclusively by mechanical process from the pressing of healthy olives and strictly in a natural way, without the addition of any chemical elements.
What is the Difference between Olive Oil and EVO Oil?
Let us start by saying that there is a significant difference between the two oils. As we have just seen in the previous section, the obtaining (and marketing) ofExtra Virgin Olive Oil, known as EVO Oil, is governed by national and European laws that require the implementation of a precise procedure in order for the oil to be labeled as EVO oil.
But what is the difference between EVO Oil and a regular Olive Oil? Let’s go into more detail, so that you who are reading, by the end of this article, will no longer have any doubt!
EVO (Extra Virgin Olive Oil) Contedoro
It is obtained only and exclusively through a mechanical process, that is, the olives must be crushed, physically crushed in order to obtain that paste that will then give birth to the oil.
This is the only process provided for us to be able to speak of EVO Oils as it is the most natural process possible to obtain that olive juice which then (through other processes such as Crushing and Gramolatura) becomes EVO Oil (Extra Virgin Olive Oil) ready to be packaged.

Although even in the case of Olive Oil the process is the same as for EVO oil, that oil that has defects (albeit slight) in terms of acidity is labeled as Olive Oil. Almost always olive oils are blends, obtained from blends of refined oils and virgin oils.

Here are the two secrets to obtaining excellent extra virgin olive oil.
1. THE RAW MATERIAL (THE OLIVES)
First of all, the olives!
If you don’t start with an exceptional raw material there is little you can do, we can sit around and discuss the best techniques in the world for producing oil but you will never get an excellent result.
In this respect, at Contedoro, we can only and exclusively rely on conferters from Irpinia, from our land, who have actually been our friends for decades. There is the utmost trust between us, and the oil that we produce annually is the result of a way of working that is always the same and highly professional, which gratifies us with recognition and awards.
Our olives are of the Ogliarola and Ravece varieties, only from native olive trees and not imported.
2. THE EXTRACTION METHOD
The method of production greatly affects the final result and it is a step, this one, that still too many people underestimate when they rely on a mill to buy EVO oil.
At Contedoro , we exclusively use the cold pressing method, which is that process of oil extraction that preserves the organoleptic qualities of the EVO oil intact, always maintaining an extraction temperature below 27°C. This method guarantees a much higher quality of the final product than the new industrial extraction methods, where the focus is always more on quantity than on the quality of the Extra Virgin Olive Oil that is obtained.
In fact, through cold pressing, you get a much lower olive yield than through hot pressing, but this is a necessary evil if you want to producegood EVO oil!

Lampante Oil, Difference with EVO Oil
Lampante Oil, as well asExtra Virgin Oil, is a product that is obtained through a process of mechanical pressing of olives but differs in quality from other oils by being less valuable.

It is called Lampante, an oil with an acidity percentage above 2%, just what was used in the past for the use of oil lamps.
In addition to this aspect, Lampante Oil generally also has an unpleasant appearance and odor due to its level of acidity, although Lampante Oil always remains an edible oil.
