Recipe “Marinated Anchovies – Neapolitan Recipe”

The gastronomic tradition of Campania embraces both land and sea dishes among the preparations that deserve a place of honor we cannot forget the Neapolitan recipe for marinated anchovies.

Ingredients Recipe:

800 grams of anchovies

½ liter of white wine vinegar

evo oil or Chili Flavored if you have it !

Alternatively.

chili

garlic

halls

fresh, chopped parsley or mint

PREPARATION

First of all, the anchovies need to be de-scaled, their heads, bones and entrails removed. Then all that remains is to wash and dry them carefully.

We cover everything with ‘vinegar and let them marinate for at least 4 hours.

After the two hours have passed they will be cooked so at this point we gently drain the anchovies from the vinegar,WITHOUT, however, rinsing them and lay them on a plate.

All that remains is to season the anchovies with the inside facing up .

We will thus continue a layer of anchovies in an oven dish, then cover with a pinch of salt , chopped garlic and chili pepper Cover the anchovies with a drizzle of extra virgin olive oil then repeat with a layer of anchovies, pinch of salt, garlic, and chili pepper and drizzle of oil as above until the anchovies are completed.

Finishing the preparation of the marinated anchovies by coating them with oil I or used Contedoro chili pepper flavoring , we lay them in the refrigerator at least seven or eight hours just long enough for them to take on flavor.
