PAPPARDELLE WITH PORCINI MUSHROOMS AND BLACK TRUFFLE OIL

Pappardelle with porcini mushrooms, is an autumn dish that is particularly tasty thanks to the addition of Extra Virgin Olive Oil flavored with Black Truffle.

Ingredients (for 4 people)

  • 1Kg of Pappardelle
  • 80g of Porcini Mushrooms
  • 20g Parmesan cheese
  • 1 clove of poached garlic
  • QB Salt
  • Extra Virgin Olive Oil Classic
  • Extra Virgin Olive Oil Flavored with Black Truffle
  • 1 Sprig of Rosemary

Proceedings

In a saucepan we put water to boil for the pappardelle.

Separately, we take a sauté pan in which we are going to sauté a poached garlic, a sprig of rosemary and the porcini mushrooms with Extra Virgin Olive Oil. While sautéing, over high heat, add two/three tablespoons of Parmesan cheese to pull up a sauce. Let us, then, rest the sauté pan with the mushrooms and in the meantime cook the pappardelle in salted water.

When they are al dente, we hunt them and sauté them in a pan with the Porcini Mushrooms, garlic and rosemary. After that, we remove the garlic and rosemary and continue sauteing them.

The garnish of the dish consists of: Pappardelle, Porcini Mushrooms and Extra Virgin Olive Oil flavored with raw Black Truffle.

Precautions: You can add the flavored Oil, either during sautéing or raw, as you like.
