CAKE WITH CHILI GANACHE AND RED FIG AND ALMOND COMPOTE

Dark Chocolate Ganache with Chili Pepper Flavored Oil is a spoon dessert where dark chocolate is combined with a definite spicy note imparted by the ExtraVirgin Olive Oil Flavored with Chili Pepper.
Ingredients for the sponge cake
- 6 Eggs
- 500g Sugar
- 500g flour
Stuffing
- 4 Tablespoons of Red Fig and Almond Compote
Bagna
- Sugar
- Water
- Rum
Ingredients for Ganache
- 160g of 70% dark chocolate
- 1/2 Glass of Extra Virgin Chili Pepper Flavored Olive Oil

Proceedings
Beat eggs and sugar for the sponge cake until it forms a mousse. Sift in the Flour and stir the mixture from the bottom up. Once the mixture is placed in the hinge, bake at 180° for 30 to 40 minutes.
Then, fill with the Red Fig and Almond Compote lightened with freshly whipped cream. For the Ganache, melt the Dark Chocolate in a bain-marie (at 90°) and finally add the Chili Flavored Extra Virgin Olive Oil and mix with a whisk. Top the filled sponge cake with the Dark Chocolate Chili Ganache.
