TOUR ELEMENTS MOLINO VIGEVANO AND EXTRA VIRGIN OLIVE OIL RAVECE “DAFNE”

The Molino Vigevano Elements Tour is an event that invites all professional pizza makers to test their skills with technique and creativity. It is a project based on culture and knowledge of the properties of the most widely used flours in the world.

The gala was held following this route:

  • In the first challenge, participants tested their senses to recognize the basic characteristics of flour: strength, dough type, hydration and rising hours.
  • In the second round there was blind tasting of doughs made with different flours and techniques.
  • Those who passed the two tests went on to test themselves in a final confrontation by creating their own pizza, trying to choose the right combination of dough/ingredients.

There are three stages of the Molino Vigevano Elements Tour.

In the third stage in Naples, winner Cosimo Pastore created his own pizza “Ariel” with sweet yellow datterini and bitterish friarielli that, with salted soppressata, created the right balance of flavors and contrasts, the most important ingredients included Daphne, Extra Virgin Olive Oil from Ravece.
