We exclusively use manual harvesting or harvesting with the aid of mechanical shakers, which favor the falling of the olives onto the nets, preserving their integrity and respecting the tree.

Furthermore, every delivery is managed with care and speed, so as to allow the olives to arrive at the mill in the best possible conditions and be processed within a few hours of harvesting.

Arrival at the mill.

Once they reach the mill, the olives undergo a careful selection process to ensure that only the best fruits continue the production journey.

After delivery, they are stripped of leaves, twigs, and any impurities and subsequently washed with potable water. Every stage is performed with care to preserve the integrity of the olives and prepare them for processing.
